The plump texture and sweet fat are truly "Supreme Melt-in-Your-Mouth" (Gokutoro). Enjoy this together with the flavor of our proprietary secret soup made with carefully chosen ingredients.

黄金屋の定番は醤油スープ。選び抜かれた昆布と国産のいりこ、削り節がベース。〆まで美味しく召し上がって頂けるのが黄金屋の極上出汁です。【ENGLISH】Koganeya's signature flavor is the Soy Sauce Soup. It is based on carefully selected kelp (konbu), domestic dried anchovies (iriko), and shaved dried fish (kezuribushi). Koganeya's exquisite broth (dashi) is delicious all the way through to the very last bite (shime).

味噌もつ鍋 / Motsunabe (Miso)

厳選した味噌をオリジナルブレンド。黄味を帯びた淡色の鍋、とろみを帯びたスープの〆はちゃんぽん麺がお勧めです。【ENGLISH】We use an original blend of carefully selected miso. This results in a lightly colored, yellowish soup. For the thick, rich soup base, we recommend finishing the meal with Champon Noodles.

汁なしのスタミナ満点鍋です!国産牛小腸から出る脂と野菜から出る水分で焼きながら食す、〆まで美味しい味噌ダレのちりとり鍋です。【ENGLISH】This is a soupless, stamina-packed hot pot! You cook and eat the ingredients using the rendered fat from the domestic beef small intestine and the moisture released from the vegetables. The finishing dish (shime) is delicious with the accompanying miso sauce in this Chiritori Nabe (Dustpan Hot Pot).
